Fundamentals of mass transfer, principles ofdiffusion, convection and phase equilibria.
Principles of absorption, distillation, extraction,
leaching, drying, crystallization, adsorption and
membrane processes with emphasis on food
industry and engineering ethics, responsibilities and
safety considerations.
